Sardinian jewels brought back from our friend Ilyse's food tour of Italy! Chunky, pink-tinged sale grosso with high moisture content and even higher salinity. Use with gusto on grilled leg of lamb served with a side of fregola, pickled veggies, pasta water, spaghetti with bottarga, homemade raviolo with saffron, lemon and ricotta, or a simple lamb ragù.
Seawater is slowly sun-evaporated from the pristine, crystalline lagoons off the island of Sant'Antioco in Southwestern Sardinia. This tiny little island is known for its laid back charm and gorgeous seaside beaches. Gleaming salt pans on the Northwestern side of the island sit at an elevation of about 33ft above seawater, dotted with pink flamingos.
